Special Recipes of Delicious Homemade Raisin Scones :
- 1 egg
- 1 clementine, the zest
- 1/2 tsp vanilla extract
- 1/2 cup whipping cream , 35% fat
- 2 1/4 cup all purpose flour
- 1/3 cup granulated sugar
- 1/4 tsp salt
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup unsalted butter , very cold and cut into cubes
- 3/4 cup raisins , soak together with Pedro Ximenez sherry overnight
- 1/4 cup Pedro Ximenez sherry
- 1 egg , beaten for egg wash
In a bowl, add in all of the wet ingredients. Whisk just to combine and set aside.
In a bowl, add in flour, sugar, baking powder, baking soda and salt. Mix to combine.
Add in the cold butter and massage it in using the tips of your fingers until the mixture becomes sand-like. Add in soaked raisins together with Pedro Ximenez sherry. Mix everything together. Note: If you don’t have Pedro Ximenez, you can use any type of your favourite sherry. Or if you don’t like it, simply switch it with water.
Pour previously prepared wet ingredients into the dry ingredients. Incorporate everything together as much as you can. They won’t be mixed properly at this stage but that’s ok.
Sprinkle some flour on the working surface. Pour the dough mixture on it. Lightly knead just to bring everything together into a ball. Do not over knead to prevent hard, dense scones.
Place the dough on a baking tray with baking sheet that has been sprinkled with some flour. Lightly press the dough into a 1/2 inch thick circle, more or less. Using a sharp knife that has been floured, cut the circle into 8 triangles. Flouring the knife will make it easier and less sticky when cutting. Separate the triangles so that there’s space between each other.
Lightly brush them with some egg wash. Bake at 200ºC (400ºF) in a preheated oven for 15-20 minutes or until golden brown and fully cooked. Enjoy!
