Stuffing in cavity of chicken:
- 1 thumb size ginger
- 2 stalks of spring onion
- 4-5 cloves of garlic
Colour coating before cooking:
- 3 tablespoons of dark soya sauce (less sodium type)
For Gravy / Braise for Chicken
- 2 cinnamon bark
- 20g rock sugar
- 6 cloves
- 1 star anise
- 2 cups soya sauce (less sodium type)
- 4 tablespoons Chinese rice wine
